-11 hour a day shifts, dishwashing in a busy kitchen

Job Description
Reports To: Camp Manager or (Kitchen supervisor during serving hours)

Duties: 
Cleanliness of workstation and proper sanitation 
Clean and sanitize kitchen including work surfaces, cupboards, storage areas, appliances and equipment
Remove kitchen garbage and trash, Sweep and mop floors daily in dining –room and all kitchen areas.
Operate dishwashers to wash dishes, glassware and flatware
Sanitize and wash dishes and other items by hand; scour pots and pans
Helping and supporting the breakfast cook with night duties (bacon trays, eggs and anything else needed the latest by 1.00 am) 
Clean and sanitize items such as dishwasher mats, carts and waste disposal units
Sweep and mop dining room after service hours- best at 11.15 pm.
Empty trash containers in the kitchen and dining area.
Keep the milk cooler stocked and replace the empty bags
Taking temperature logs of cooling units in the kitchen and dining area daily - at 9.00 pm every day.
Keep an eye on the dishwasher’s cycle and sanitation temperature.
Assist in offloading supplies when trucks arrive.
Put delivered supplies on the shelves following the FIFO 
Change the fryer’s oil when instructed by kitchen supervisor, and other duties told the same day.
Keep the whole kitchen and storage area clean and tidy, sweep and mop it daily.
Ensure that you change your gloves when switching from dealing from clean dirty dishes to clean dishes.
Keep a count of the trays during your shift.
Replace empty water cooler tanks.

Other tasks and duties assigned by kitchen supervisor or Camp Manager.
There are things that have to be done at the same time daily.
